After a light pressing, a quick maceration on the skins in stainless steel is done. Re-fermentation is then carried out at controlled temperature.

Icardi is a family winery in Piedmont founded in the 1960's that is overseen by brother & sister team Claudio and Mariagrazia Pierino, whose father started the winery.   Claudio is an oenologist who farms the estate vineyards utilizing organic & biodynamic methods. Mariagrazia focuses on winemaking and is the face of the high quality Icardi brand which produces Barolo, Barbaresco, as well as beautiful Brachetto.
