From a 30 year to 80 year-old cool-sited vineyard on the slopes above Azé in the Côte Mâconnais. The vineyards have well-draining limestone-rich soil. High-Trained, farrmed sustainably, and the westerly aspect and soil contrribut to the wine's freshness and tension.
The grapes are crushed and left for several hours of skin contact before a long pressing. pressed, settled then racked to large-format barrels for a native fermentation. With an élévage of 14 months and another six in bottle, the wine has developed a depth and minerality that defies it's appellation.
