Taste: It’s the teinturier grape’s red skin and red flesh that give this whole cluster Saperavi its inky cranberry color. A juicy medium-bodied, grippy tannic wine. Loads of black fruit and leather aromas lend a spiced dynamism to the expressive Le Rouge.

Grapes are picked and transferred into an open fermenter, a gentle foot stomp and seven days of maceration. The small free-run volume is blended with the pressed must, and allowed finish fermenting and age in older barrels.

Barbichette is a winemaking project recently begun by Louisiane Remy and César Vega. César started in the coffee world: they made their first bottling of riesling in the roastery César founded in Brooklyn in 2012. They source grapes from Finger Lakes vineyards grown in accordance with their natural wine philosophy. In the winery, they use no additives or commercial yeasts, nor do they do any fining or filtering. This riesling is grown biodynamically in an east-facing vineyard by Seneca Lake. Organically grown, biodynamically grown, low-intervention/natural wine, vegan.
